The instant pot really is my favorite thing in the kitchen! Especially with an infant, it’s so hard to find the time to prepare elaborate meals. So I’ve found several ways to hack my favorite recipes into simple, quick, one pot versions!
I love chicken cacciatore! Before I became a mom, I would prepare it and let it simmer for hours. Now I hardly have a minute to boil water! But this meal is truly delicious. Cacciatore means “hunter” in Italian. In cuisine, alla cacciatora refers to a meal prepared “hunter-style”.
All you need to make this simple and delicious recipe:
- 1 jar of your favorite pasta sauce
- 1 can of petite diced tomatoes
- green and red bell pepper
- onion
- garlic
- 3 chicken breasts
- salt and pepper
- Pasta or rice to serve over




Set your instant pot to manual and cook for 35 minutes. When it is ready, remove the chicken to shred it, return to the pot and you’re ready for dinner! Serve over rice or pasta.
