French Onion Beef Casserole

I LOVE french onion soup! One day while scouring my pantry for dinner inspiration, I came across a can of Campbell’s condensed french onion soup. I began to wonder what I could make to use it up, and that’s where french onion beef casserole comes in! This recipe is delicious, savory, and makes great leftovers! My husband and I really enjoyed making this.

Here’s What You Need

  • 1lb ground beef
  • 2 tbsp olive oil
  • 1/2 a large onion
  • 1 tbsp minced garlic
  • 8 oz white mushrooms
  • 1 can condensed french onion soup
  • 3/4 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup french fried onions
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 8 oz uncooked egg noodles

Here’s How You Make It

Start by preheating the oven to 350 degrees. Cook the egg noodles according to the package directions.

Next, cook the ground beef. After it is browned, drain and set aside, Add the oil to the pan. Once it has heated, add in the onions. Cook for a few minutes until they start to become translucent. Add in the garlic and continue to cook until they become nice and fragrant.

Next, add the mushroom to the pan. Cook with the garlic and onions for 3-5 minutes to start softening them.

Now you can add the beef, soup, and sour cream to the pan. Mix well and simmer for about ten minutes or until mushrooms are soft. Add one cup of the cheddar cheese and stir until it is nice and incorporated. Next, put the cooked egg noodles into a 13×9 dish.

Pour the beef and onion mixture over the noodles and mix to combine!

Top with the remaining cheese and french fried onions. Bake for 25 minutes, let cool, then serve it up! 🙂

Store any leftovers in the fridge in an air tight container for up to 3 days. Enjoy! 🙂
